I love this recipe because it's quick, easy, and kids love it! Serve as is, or add grilled children, salmon, or avocado! The Millers have this in the fridge all summer long. It can be served hot or cold, so it's great to double the recipe and then you can munch on it throughout the week. For all my citrus-lovers, this easy recipe is a crowd pleaser, enjoy!
Easy Lemon Pasta
Serves 4-6
Ingredients :
4 Garlic Cloves, Minced
2 Lemons, Juiced & Zested
1/2 C XVOO
1/4 C Basil, Chiffonade
3/4 Tsp Kosher Salt
1/2 Tsp Fresh cracked pepper
1 LB of your favorite pasta (I prefer Rigatoni)
1/4 C Basil chopped
1 Pint cherry tomatoes, halved
2 Cups Feta Cheese
Instructions:
In a large bowl whisk garlic, lemon juice, lemon zest, salt, and pepper. Set aside. Meanwhile bring a large pot of salted water to a boil. Add pasta, stirring occasionally. Once cooked, drain pasta. Quickly add the pasta to the bowl with lemon sauce. The heat from the pasta will help cook the garlic. Season with more salt and pepper to taste. Once pasta is thoroughly mixed - add basil, tomatoes, and feta. Transfer to serving bowls. Can be served hot or cold.
