Ruby Family Chili




 


Ruby Family Chili

Serves 10



Chili :

  • 1 Onion

Small dice

  • 3 Bell Peppers

Medium dice

  • 3 Garlic Cloves

Chopped

  • 2 Tbsp

EVOO

  • 2 Lbs

Ground Beef (or bison to be healthier)

  • 1 Can

San Marzano Tomatoes (crushed or hand crushed whole)

  • 2 Tbsp

Tomato Paste

  • 1 32oz box

Beef Stock

  • 2 Tbsp

Chili Powder

  • 1 Can

Chili Beans

  • 1 Can

Pinto Beans drained

  • To Taste

Salt

  • To Taste

Pepper

  • To Taste

Frank's Hot Sauce


Toppings:

  • Frank's Hot Sauce

  • Shredded Cheese

  • Sour Cream



 

Instructions:


  1. Sauté the onion, pepper, and garlic in oil in a heavy sauce-pot until tender, but not browned

  2. -Remove from the pot and set aside-

  3. Add the meat to the pot and brown over high heat, breaking up the meat with a spoon

  4. Return the vegetables to the pot and add the remaining ingredients

  5. Simmer uncovered until the chili gets to the desired thickness, about 45-60 minutes

  6. Stir occasionally

  7. Add beans 15 minutes before serving

  8. Serve with shredded cheese, sour cream, and Frank’s Hot Sauce
