Ruby Family Chili
Serves 10
Chili :
| Small dice |
| Medium dice |
| Chopped |
| EVOO |
| Ground Beef (or bison to be healthier) |
| San Marzano Tomatoes (crushed or hand crushed whole) |
| Tomato Paste |
| Beef Stock |
| Chili Powder |
| Chili Beans |
| Pinto Beans drained |
| Salt |
| Pepper |
| Frank's Hot Sauce |

Instructions:
Sauté the onion, pepper, and garlic in oil in a heavy sauce-pot until tender, but not browned
-Remove from the pot and set aside-
Add the meat to the pot and brown over high heat, breaking up the meat with a spoon
Return the vegetables to the pot and add the remaining ingredients
Simmer uncovered until the chili gets to the desired thickness, about 45-60 minutes
Stir occasionally
Add beans 15 minutes before serving
Serve with shredded cheese, sour cream, and Frank’s Hot Sauce
