Clean Cobb Salad Recipe
This Cobb salad is full of vibrant vegetables and a protein-packed punch, while the Greek yogurt ranch dressing adds a creamy, tangy touch that’s lighter than traditional versions.
Ingredients:
For the Salad:
* 4 cups Romaine lettuce, chopped
* 1/2 cup edamame beans (cooked or frozen, thawed)
*. 1/2 cup corn (fresh, frozen, or canned)
* 1/2 cup chickpeas (cooked or canned, drained and rinsed)
* 2 hard-boiled eggs, sliced
*. 1 avocado, sliced
* 1/2 cup shredded carrots
* 2 tablespoons fresh chives, chopped
For the Homemade Greek Yogurt Ranch Dressing:
*. 1/2 cup plain Greek yogurt
*. 1 tablespoon olive oil
*. 1 tablespoon lemon juice
*. 1 teaspoon Dijon mustard
*. 1 teaspoon garlic powder
*. 1 teaspoon onion powder
*. Salt and pepper to taste
*. 2 tablespoons fresh chives, finely chopped
*. 1 tablespoon fresh parsley (optional)
*. 1-2 tablespoons water to thin (if desired)
Instructions:
1. Prepare the Salad Ingredients:
If using frozen edamame, cook according to package instructions and let it cool. If using canned corn, drain and rinse it.
Drain and rinse the chickpeas (if using canned). You can lightly sauté them with a bit of olive oil for extra flavor if desired.
Hard-boil the eggs (about 9-10 minutes), peel, and slice.
Shred the carrots using a grater or purchase pre-shredded carrots.
Slice the avocado and chop the Romaine lettuce and chives.
2. Make the Greek Yogurt Ranch Dressing:
In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic powder, onion powder, salt, and pepper.
Add the fresh chives (and parsley if using) and mix well.
If the dressing is too thick, gradually add water until you reach your desired consistency.
3. Assemble the Salad:
In a large salad bowl, toss together the Romaine lettuce, edamame, corn, chickpeas, shredded carrots, and chives.
Arrange the sliced hard-boiled eggs and avocado on top of the salad.
Drizzle with the homemade ranch dressing and toss gently to combine.
(Sometimes for presentation I like to keep it deconstructed to allow for more of a buffet style or CYO salad family style.
4. Serve:
Serve immediately or chill in the fridge for 10-15 minutes before serving. Enjoy this clean, fresh Cobb salad as a light meal or a hearty side!
