Grilled Chicken Kabobs with Chimichurri Marinade and Sauce

 
 
 

Ingredients:

For the Chimichurri Marinade and Sauce:

*      1 cup fresh parsley, chopped

*      1/2 cup fresh cilantro, chopped

*  2 tablespoons fresh sage, chopped

*  2 tablespoons fresh basil, chopped

*  4 garlic cloves, minced

*  2 tablespoons Dijon mustard

*      1/4 cup red wine vinegar

*  1/2 cup olive oil

*      1/2 teaspoon red chili flakes (optional, for a bit of heat)

*      Salt and pepper to taste

For the Chicken Kabobs:

* 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes

*. 1 red bell pepper, cut into chunks

*. 1 yellow bell pepper, cut into chunks

*. 1 red onion, cut into chunksInstructions

*. Wooden or metal skewers (soak wooden skewers in water for 30 minutes before using)

Instructions:

1.  Make the Chimichurri Sauce:

  • In a food processor or blender, combine parsley, cilantro, sage, basil, garlic, Dijon mustard, red wine vinegar, and olive oil. Blend until smooth but slightly chunky.

  • Season with salt, pepper, and chili flakes to taste.

  • Set aside half of the Chimichurri for serving as a sauce and use the other half as the marinade.

2.  Marinate the Chicken:

  • In a large bowl or resealable plastic bag, add the chicken cubes and pour half of the Chimichurri marinade over them. Toss to coat.

  • Cover and refrigerate for at least 1 hour (or up to overnight).

3.  Assemble the Kabobs:

  • Thread the marinated chicken onto skewers, alternating with pieces of bell peppers and red onion.

4. Grill the Kabobs:

  • Preheat your grill to medium-high heat.

  • Place the skewers on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature of 165°F).

  • .Brush with a bit of the reserved Chimichurri during the last few minutes of cooking for extra flavor. Serve immediately as a side dish with your favorite protein, or enjoy it on its own.

5. Serve:

  • Transfer the kabobs to a serving platter

  • .Drizzle with the reserved Chimichurri sauce and serve immediately. Enjoy your vibrant and flavorful Chimichurri chicken kabobs!
