Family-Style Breakfast Scrambler with Sausage, Peppers, and American Cheese
This recipe should comfortably serve 8 people, with hearty portions for everyone to enjoy! You can also keep it warm in the oven (covered with foil) while you prepare any other sides or drinks for the meal.
Ingredients:
* 12 large eggs
* 1 lb breakfast sausage (links or bulk)
* 2 large bell peppers (any color), diced
* 1 medium onion, diced (optional)
* 1 1/2 cups American cheese, shredded (or about 6-8 slices)

* Salt and pepper to taste
* Fresh herbs (like parsley or chives) for garnish (optional)
Instructions:
1. Cook the Sausage:
In a large skillet or griddle (or two medium-sized pans), heat 2 tablespoons of butter or oil over medium heat.
Remove the sausage from its casing (if using links) and crumble it into the pan.
Cook, stirring occasionally, until browned and fully cooked, about 7-10 minutes. Break the sausage into small pieces as it cooks.
2. Add Pepper and Onions:
Add the diced bell peppers and onions (if using) to the pan with the sausage.
Continue cooking for about 4-5 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized. Season with salt and pepper to taste.
3. Scramble the eggs:
While the sausage and veggies are cooking, crack the eggs into a large bowl(or two bowls if necessary), adding a pinch of salt and pepper. Whisk the eggs together until fully combined. Add a splash of water.
Pour the eggs into the large skillet with the sausage and veggies.
Let the eggs cook undisturbed for a minute, then gently stir, scrambling them until they're mostly set, about 3-4 minutes.
4. Add the Cheese :
Once the eggs are nearly done, sprinkle the shredded American cheese (or add slices) over the eggs and let it melt into the mixture. Stir occasionally to combine, ensuring the cheese is fully melted and incorporated.
5. Serve:
Once everything is cooked through and the cheese has melted, taste and adjust seasoning if needed.
Transfer the scrambler to a large serving platter or divide it between two platters.
